Welcome to the Book Art Publishing community! Whether old or new, 500 is not considered rare, or even scarce. Depending on demand, it might even be hard to find that many buyers! As long as a book is in print (available from the publisher) it is not scarce or rare. It's in print. Even if the edition is 10.

If a copy becomes available on the market every few years, or every decade or two, that's scarce. If there are 3 copies known in existence, all in permanent collections, and a new one is discovered and comes up at Sotheby's or in the Maggs catalog or wherever, that's rare.
