Angee,

An excellent paper on which to make original prints is JetPrint Photo
Professional from Hammermill. However, it sounds as though the problem may
be with your photo manipulations rather than with the paper. In Photoshop,
try adjusting the brightness/contrast until the background is the shade you
want.

To change the background color with one command, select a small portion of
it, then choose "Select" then "Similar." Then you can either delete it or
replace it with your selected color.
