There are different kinds of starch available on the market,
Prepared Foods lists in their Annual Buyers Guide for the
Engineered Foods Industry: Arrowroot starch, cassava (tapioca)
starch, corn starch, modified starch oat starch, potato starch,
processed starch, rice starch, rye starch, taro root starch and
Wheat starch,

What is the difference?

I don't know, except where they came from.
