Christopher,

It is possible to spend a great deal of time deciding which, among
many, enzymes would work best for your project.

Or, you could simply purchase some pancreatin at your local drugstore.

Pancreatin contains enzymes which digest fats, starches, and proteins.

These tablets should be dissolved in body-temperature water and the
paper in question should then be soaked in the water.

All of the natural adhesives and/or materials will be dissolved,
including any sizing.  Rinse well after using.

When the work is done, the paper will need to be resized.  This may
be done using dilute gelatin or dilute methyl cellulose.
