saponification

The hydrolysis of esters by alkalis, and especially the hydrolytic action by which fats and oils containing glycerides are converted into soap and an alcohol, which, in the case of glycerides, is glycerin. See also: FATLIQUORING ; ROSIN SIZE . (195 , 233 )
